Stump's Smothered Chicken

2 large onions, sliced
½ cup chopped Italian parsley
1 tsp. oregano
1 tsp. basil
3 tbsp. extra virgin olive oil
1 tbsp. finely chopped garlic
1 tsp. ground pepper
¾ tsp. salt
1 skinned chicken (4 pounds)
2 cups Stump's Mediterranean Olives
2 cups water
Cherry tomatoes and parmesan cheese for garnish

Preheat oven to 350°.

Stir together first 8 ingredients in a 5-quart Dutch oven.

Add chicken and water; bring to a boil over high heat.

Transfer to oven and bake uncovered for 30 minutes.

Transfer the chicken pieces to a deep serving bowl and garnish with cherry tomatoes and grated parmesan cheese.
